The Power of Nature - Clarity and balance in wine with ViniFix™

24. October 2025

For us winemakers, autumn is more than just the end of a yearly cycle – it is a time for reflection and preparation. Outside, nature comes to rest, but the real magic begins in the cellar. This is where the power of nature unfolds in all its depth – accompanied by experience, intuition and the right helpers. One of these is ViniFix™ from 2B FermControl GmbH – a product that combines natural balance and modern cellar technology like no other.

In harmony with nature - ViniFix™ as a natural path to purity

The philosophy of 2B FermControl is based on a simple but powerful principle: “The Power of Nature” – using the power of nature instead of working against it.

ViniFix™ was developed precisely for this purpose: to help wines achieve clarity, purity and sensory harmony in a gentle, organic way.Instead of aggressive chemicals, ViniFix relies on the natural effect of yeast cell walls, bentonite, chitosan, copper citrate and ascorbic acid – intelligently combined to gently neutralize off-flavour notes such as reduction, bumps, smoke or mushroom tones.

This preserves the essentials: the natural character of the wine, the fruit, the origin, the winemaker’s signature.

ViniFix™ - Multifunctional, gentle and full of effect

In practice, the strength of ViniFix is particularly evident after primary fermentation – right now, in late fall, when the young wines are resting and it is time to prepare them for the next phase: malolactic fermentation.

ViniFix plays a dual role here:

  1. Sensory Clarification: Before malolactic fermentation (MLF) begins, ViniFix removes undesirable “off-flavors,” such as reduction or phenolic defects, that could interfere with the course of the second fermentation.
  2. Optimal conditions for active di-cultures: By stabilizing the young wine, ViniFix creates a balanced environment for the targeted addition of active di-cultures—allowing organic acid to be broken down naturally, cleanly, and in a controlled manner.

The result: a harmonious, lively wine, free of off-flavors—in keeping with the principles of natural winemaking.

Natural instead of chemical - advantages over commercially available products

While many commercially available fining agents rely on chemical reactions, ViniFix takes a different approach – that of nature:

Criterion ViniFix™ (2B FermControl) Conventional products
Base Natural-based components (yeast cell walls, chitosan, bentonite) Synthetic or highly reactive agents (copper sulphate, activated carbon)
Effect Multifunctional. Binds phenols, sulfur compounds, and unwanted tones Mostly one-dimensional. Effective only against a single contaminant
Sensory Characteristics Neutral. Preserves fruit and varietal character May affect freshness, color, or mouthfeel
Sustainability Organic-compliant. Resource-efficient. Low-waste High material consumption and high disposal costs
Compatibility with BSA Supports active di cultures May disrupt natural microflora

With ViniFix, I consciously opt for naturalness, against over-engineering – and for wines that make their origin tangible.

The power of balance - why now is the right time

ViniFix is most effective in the fall and winter, when wines settle and find their balance. Now is the best time to:

  • identify and correct sensory irregularities,
  • gently stabilize the wine,
  • and create ideal conditions for malolactic fermentation.

The result is clear, lively wines that present themselves harmoniously in the spring—supported by the power of nature and minimal intervention.

Conclusion - naturalness is not a trend, it's the future

ViniFix™ stands for what modern viticulture is all about: respect for nature, clever technology and the will to reveal the best in wine – not to cover it up.

With the power of nature, the right cultures for the BSA and a sensitive eye for detail, every wine becomes what it should be: authentic, lively, genuine.
